How diverse are your vegetable choices? If you’re rotating the vegetable slot on your plate to just a few, it’s time to switch things up. Choosing different vegetables ensures you’ll get a healthy array of nutrients while also being introduced to new tastes and textures. Here are some ideas:
Add chopped celery, spinach, and onion to turkey, tuna, or chicken salad
Make mashed sweet potatoes
Mix chickpeas into a salad
Blend shredded carrots and cabbage with mayo or plain yogurt and spices for a delicious sandwich topping
Use lightly steamed cauliflower in place of potatoes in your favorite potato salad recipe; mix with mayo, a little mustard, and diced bell pepper
Drink lower-sodium 100% tomato juice or vegetable juice
Try a vegetarian lentil or bean recipe
Stir-fry veggies in a bit of sesame oil
