Meatless meals aren’t just for vegetarians. Even the most devout carnivore can enjoy veggie fare while reaping the health benefits — including more fiber, and higher levels of antioxidants. Here are some pointers to start you off:

  • Make Mondays meatless. As the start of the traditional work and school week, Monday is a perfect day to do something different. If you can’t commit to the entire day, start with a meal.

  • Swap it out. Substitute nuts, beans, or legumes for meat in your favorite recipes. Lentils are a hearty addition to pasta sauce, and tacos are tasty with black or pinto beans. Toss nuts and beans into soups, stews, salads, or wraps for nutrient-packed meals that satisfy your hunger.

  • Dare to dairy. Try sharp-flavored cheese, such as feta, parmesan, or blue cheese, where a little goes a long way. Use grated or crumbled cheese as a garnish for salads and main dishes.
