Ripe for the Picking - Wednesday, October 30
Healthful varieties of produce peak during late fall and early winter, making it easy to enjoy delicious nutrition benefits with these colorful, delicious choices:
Cranberries. This tart yet antioxidant-rich fruit is eager to dance upon your plate as the classic side sauce. But you can enjoy the cranberry’s versatility by pairing it with apples — another autumn star — and a little maple syrup for a delicious dessert served anytime.
Sweet potatoes. Loaded with vitamins A and C, and full of fiber, sweet potatoes are also a good source of potassium. For a sweet and spicy twist, bake diced spuds drizzled in olive oil and sprinkled with a dash of cayenne pepper at 400 degrees for about 40 minutes.
Brussels sprouts. Packed with folate, fiber, and vitamin C, these veggies can be shredded, then sautéed with garlic and onions — a perfect accompaniment to pork. Or roast at 400 degrees in a shallow pan, topped with sea salt and lemon juice or a touch of soy sauce.
